Lamb is sold whole animal:

  • $5.75/lb dressed weight

  • $60 processing fee (subject to change according to the processor)

  • $0.70/lb custom cut and wrap fee paid to the butcher (subject to change according to the butcher)

  •  $100 deposit required to reserve an animal

  • Meat is picked up directly from the butcher in the Metro Portland Area (Typically Sharp's in Hubbard)

 

Dressed weights range from 40-60 lbs. for a whole animal. The price per pound for finished cuts averages between $9.50-$10.50/lb depending on whether you choose bone-in or boneless cuts. We personally recommend bone-in for more flavorful, juicy cuts. Plus you can use the bones for making savory stock, sauce, or gravy.

 An average sized lamb will yield approximately 35 lbs of meat and include the following cuts:

  • Shoulder chops or roasts

  • Loin chops

  • Sirloin chops

  • Rib chops

  • Leg roasts (whole or half) or steaks

  • Shanks

  • Stew meat or ground burger

We raise Dorper/Katahdin cross sheep known for their naturally lean and mild-flavored meat. Many compare the flavor of our lamb to beef! Our lamb is certified Animal Welfare Approved and Grassfed by A Greener World. These programs guarantee that our animals are raised outdoors on pasture and managed according to the highest welfare and environmental standards It is the only label in the U.S. to require audited, high-welfare production, transport and slaughter practices. Our lambs are processed onsite by a mobile slaughter unit to eliminate the stress of loading and transport to facilities. We assure the highest quality care for our animals from birth to slaughter.
